cherry tomato salad

Ingredients
- 1 lbVillage Farms cherry no. 9 fall in love again® tomatoes
- 1 lb Firm tofu
- 1 cup Edamame beans, shelled
- 1 cup Corn
- 1 cup Black beans, cooked
- ¼ cup Fresh Italian flat-leaf parsley
- ½ cup Feta cheese
- ½ cup Cilantro vinaigrette
- ½ tsp Black pepper
- ¼ tsp Sea salt
Instructions
- Cut all of the cherry tomatoes in half – reserve.
- Thoroughly mix all ingredients (except tomatoes) gently by hand in a large mixing bowl.
- Gently fold in the cherry tomatoes and any juice by hand.
- Add salt and pepper to taste. Adjust as needed.
cilantro vinaigrette

Ingredients
- ¼ cup Extra virgin olive oil
- ¼ cup Cilantro
- ¼ cup Grain dijon mustard
- ¼ cup White wine vinegar
- ½ tsp Black pepper
- ¼ tsp Sea salt
Instructions
- Combine all ingredients in a food processor or combine in a bowl and puree with a hand blender. (All of the cilantro plant is useable, including the stalk…)
