Freddy’s pomodori al forno

Ingredients
- 2 lb Village Farms heavenly villagio marzano® tomatoes
- 2 cloves Garlic
- 3 oz Extra virgin olive oil
- 1 cup Fresh basil
- ¼ cup Fresh Italian parsley
- 4 oz Grated Parmigiano
- Salt
- Pepper
Instructions
- Wash, drain, and slice the mini san marzano tomatoes.
- Clean the garlic, basil, and parsley; chop finely.
- Combine all ingredients except the Parmigiano in a roasting pan and roast in a 400º oven for 1 hour.
- Remove from oven; re-season with salt and pepper to taste.
- Cook 1 lb of pasta. Fold in roasted tomato sauce and add Parmigiano and some extra virgin olive oil. Buon appetito.
